I will be doing a demonstration for a class in Richmond sponsored by Sur La Table on September, 7th at 6.30pm. The title of the program is Flavors of India--Understanding Indian Spices. From my restaurant Passage to India's menu the following dishes will be prepared
Garam Masala: whole spices roasted and ground (demo only)
Konkan Fish Curry - Grouper fillet in a coconut sauce from the west coast
Panchphorner Parmal Shaak - East Indian, stir-fried gourds with five seed flavor
Keerai Kootu - Spinach and lentil curry from the southern region
Peas Pulao - Long grain Basmati and peas flavored with whole spices
Cucumber-Mint Raita - Lightly spiced, churned yogurt with cucumber & mint
